The basic ingredient in both oil and ghee is fatty acid. Oil contains a large amount of unsaturated fats.
Safflower oil contains 73 percent unsaturated fats
and groundnut oil 38 percent.

In contrast, vegetable or cow ghee contains less than 5 percent unsaturated fats.
If oil and ghee are consumed in excess, obesity will be the problem. Eating more than 40 percent of energy from fat can lead to heart attacks over time.
Some research has shown that people who eat high-fat foods have a higher incidence of colon and breast cancer.
Fatty foods (oils) containing saturated fat reduce the risk of heart disease. Also the skin disease called phrenoderma does not occur. So oil is better than ghee in diet. It’s okay to get 20 to 25 percent of your total energy intake from fat. But for that,

oil should be eaten as much as possible. Also, safflower, sunflower or soybean oil is good. “I will eat with you. . .” Instead of saying, “Eat with oil . . .” It should be said!
Mix sesame, mustard and groundnut oil in equal proportions and use it. It is beneficial for heart patients.
